Best Ever Refrigerator Mashed Potatoes

Make these ahead of time and let the flavors set while in the refrigerator.

  • 5 pound(s) potatoes
  • 1 cup(s) sour cream
  • 1 teaspoon(s) salt
  • 2 tablespoon(s) butter
  • 6 ounce(s) cream cheese
  • 2 teaspoon(s) onion salt
  • 1/4 teaspoon(s) pepper


  1. Cook peeled potatoes in boiling water until tender. Drain. Mash until smooth. Add remaining ingredients and beat until light and fluffy. Cool. Cover and place in refrigerator. May be used any time within two weeks.

  2. To use, place desired amount in greased casserole, dot with butter and bake at 350 until heated through- about 30 minutes. Makes 8 cups or 12 servings. Note: if you use the full amount, heat in a 2-qt casserole and dot with 2 T butter.
