Definitely a keeper because I love a simple recipe that turns out great. I doubled the recipe. In the interest of cutting a few calories, I sub'd half the butter w/ applesauce, replaced the white sugar w/ equal parts brown sugar & splenda, but then ended up adding about 2 tbsps white sugar to get the taste right. Threw in about 3 tbsps ricotta cheese just because I needed to use it & a tbsp of vanilla because it seemed like the right thing to do. Sprinkled slivered almonds on top. Thanks for the recipe!

Ingredients
- 3 large ripe bananas
- 3/4 cup white sugar
- 1 egg
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 cup all purpose flour
- 1/3 cup melted butter
Preparation
- Mash bananas, add sugar and slightly beaten egg.
- Add melted butter.
- Add the dry ingredients.
- Stir until moist.
- Bake @ 375 F for 20 minutes.
