Best Citrus Brine

This brine is excellent for chicken or turkey.

  • 1 cup(s) salt
  • 1 orange cut into wedges
  • 1 lemon cut into wedges
  • 1 medium onion cut into wedges
  • 3 clove(s) garlic whole
  • 4 bay leaves
  • 4 sprig(s) fresh thyme
  • 1 sprig(s) fresh rosemary
  • 1 tablespoon(s) ground black pepper


  1. Remove the giblets and neck before brining. Rub good amount of salt inside your turkey, and place remaining salt, lemons, oranges, onion, garlic, bay leaves, thyme, rosemary, and pepper into a large container. Add small amount of water to stir and mix until salt is dissolved. Next, place the turkey in the container, and fill with water. Tip: Use a plate on the turkey to keep it below water level. Cover container and refrigerate overnight. Discard brine after removing turkey. (Be sure to sanitize the container thoroughly before reusing.)
