- 2 eggs
- 2 large eggs
- 1/4 c. sugar
- 1 teasp. vanilla
- Dash salt
- 1 c. milk
- 1/2 c.flour
- 1/2 teasp. baking powder
- 3 c. fresh assorted berries (such as raspberries, blueberries, strawberries)
- 1. Preheat oven to 400 degrees. Lightly coat 6 6 oz. individual quiche dishes with nonstick spray (or one large quiche dish) If using the small ones, place them in a 15x10x1 baking pan & set aside.
- 2. In a medium bowl, combine eggs, sugar, vanilla and salt; whisk until frothy. Whisk in the milk until combined. Add flour and baking powder; whisk until smooth.
- 3. Divide the berries among individual quiche dishes (if using). Pour batter over berries. Bake for 20 min. until puffed and golden. Serve warm. Sift powdered sugar over or serve with ice cream.
