A gently roast in the oven. Sliced peppers can be stored in olive oil in an airtight conatiner for 2 weeks.

  1. Roast peppers on a rimmed baking sheet in a 375 degree oven, turning once, for 20 minutes. Turn off oven; let peppers stand until barely warm, about 40 minutes. Peel, seed, and slice peppers.
