Ingredients

  • 4 ounces uncooked orzo (rice-shaped pasta; about 1/2 cup)
  • 4 teaspoons olive oil, divided
  • 4 (6-ounce) skinless, boneless chicken breast halves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground red pepper
  • 1 cup red bell pepper strips
  • 1 cup green bell pepper strips
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 1 1/2 tablespoons fresh lemon juice
  • 3/4 cup (3 ounces) crumbled feta cheese

Preparation

  1. Cook orzo according to package directions, omitting salt and fat.
  2. While orzo cooks, heat 2 teaspoons olive oil in a large nonstick skillet over medium-high heat. Sprinkle chicken with salt, black pepper, and red pepper. Add chicken to pan, and cook 4 minutes on each side or until done. Remove chicken from pan, and keep warm. Add the remaining 2 teaspoons olive oil and bell peppers to pan; sauté 2 minutes. Add oregano and garlic; sauté 1 minute. Remove from heat, and stir in lemon juice.
  3. Combine orzo and feta, and serve with chicken and bell pepper mixture.
