Giving it 4 stars because it has potential. I eat mostly vegetarian so I love the idea, it would be a great alternative for non-meat eaters at holidays. It is a little bland as is. Next time I'd add some Marsala or Sherry to the mushroom mixture and add a little more rosemary and thyme and salt/pepper.

Kinda hard to get a good bite with everything you want on there. I should have read the review that said to add some marsala or sherry, that would have been nice. I wouldn't NOT recommend this, but I have had much better CL vegetarian dinners.

It's pretty good, but not a standalone dinner. Chopped parsley helped punch it up a notch (thanks for the warning, fellow reviewers!) and I used all red beets because I buy them by the bunch. Maybe that one golden beet was the secret weapon? I'll make it again, but really, I'm glad that this recipe made me buy some phyllo sheets, because I've been baking Brie in them with honey, thyme, and maybe a smidgen of fruit jam and eating it with a spoon. And wine. And it is glorious. Now go make this! but don't forget to get Brie...for later.
