Beet and Fennel Salad with Fried Capers

    Really enjoyed this recipe! Easy to prepare and quite delicious. The only alterations -- we roasted the fennel for the same time as the beets to mediate the licorice taste/smell and substituted balsamic vinegar for sherry because we had it on hand. I was amazed how different the fried capers tasted; I definitely plan to use that technique again. My boyfriend had never tried beets, fennel or capers and loved all three when prepared this way! Will definitely make again!
