    This was a hit with us and will definitely make it again. Used alone on crackers and also topped with leftover spinach balls.

    I used Castlerock Beer -- may have been too dark or flavorful. Made 1/2 of the recipe & it was hardly touched at a party. I won't be making this again.

    This recipe is a hit! Especially with the guys that attend my parties. I usually serve it with Honey Wheat pretzel twists. I also serve it as a topping for hotdogs and bratwursts. We have frequent cookouts and I am asked to bring this cheese spread all of the time! And best of all, it takes very little time to whip up and makes a big batch. I have also given away smaller containers as Christmas gifts.

    I love this recipe and so does everyone else. Every time someone has a party they will request that I bring beer cheese with me. I keep telling them how easy it is to make but no one believes me. Try it, everyone will love it!!!

    Just made this today for a small party. I tasted it before I put it out, and I was hesitant to serve it. It wasn't too big of a hit. To save time, I used pre-shredded cheddar (next time I would put it in a Cuisenart). It is VERY cheesy and for lack of a better word, interesting. FYI - This recipe makes a lot! For a party of 8 I halved the recipe.

    This was repulsive! Followed the recipe and it came out gross. Tasted too much like beer... and couldn't believe there was no heating involved! We ended up trying to melt it in the oven to try to make the texture better, and it was still gross. Threw away two pounds of cheese.

    This really does make a big batch! I took half of it to a family get together, and we had no problem gobbling the rest of it at home! I made it exactly as written, and it was terrific, even better after several days in the fridge. It does soften up quite a bit after a while at room temp, so I'd advise using smaller serving bowl, and refilling it as needed with chilled spread. Great with crackers and/or veggies.

    I served this with plain water crackers and thought it was great. My husband said it was pretty good but thought I made it too garlicky. I would definitely make this again and I would probably try to cut the recipe in half next time.

    We just made this for the Super Bowl and love it!!! The only thing we did different was add a little more hot sauce and red pepper. Very easy to make if you follow directions and we are sure to come back home empty handed!

    This is so good on hot dogs! You can't use pre-shredded cheese in this because there is something added to the cheese so it doesn't stick together-- if you use shredded cheese it won't blend! you have to shred it yourself. But it's worth it.

    I was really excited to try this. The fact this would keep in the refrigerator for a while was definitely appealing. it came out AWFUL! Tasted like beer, was soupy and the 1/2 Vidalia sweet onion overpowered it too! I don't know what went wrong. I followed the recipe to the tee. Ended up throwing it away and like another reviewer am upset that I wasted 2 pounds of good cheese! Please don't try this.

    One-star reviewers: if you based your review on the taste/texture of the dip right out of the mixer, it's horrible. It needs time in the fridge to come together and then it is truly delicious and spreadable. And ditto what lisam29 said about not using pre-shredded cheese; that will ruin it. If you find the beer taste too strong with an amber beer, just use something simple, like Miller Lite. Seriously, give it another chance!!

    Oh, stop kvetching! Y'all probably didn't beat it or chill it long enough. Yeah, it looks a little rough, but you have CHILL IT FOR TWO HOURS! If all fails, read the directions... :)

    If i could give this recipe negative stars I would. My dog wouldn't eat this when I was done making it. I hope whomever created this recipe doesn't have starving mouths to feed.
