Husband loved it and I thought it was OK. Brined for 24 hours though, rather than the 4-6. Would add more of the spices into the brine next time. Served with polenta cakes and roasted brussel sprouts. It's very easy to burn the onions at the end when they are cooking with the pork chops - I would stir occasionally.

just OK. brined for 6 hours, but couldn't taste the brine in the chop. the onion marmalade, however, was excellent. the vinegar went well with the sweetness of the red onion, a sweet and sour flavor.
