Beef Stew with Poblanos, Tomatillos, and Potatoes

    The only change I made was to make half a recipe since there are only 2 of us. This stew had good flavor and was easy. Hardest part was finding the canned tomatillos, but found them at a local Mexican grocery story. Will definitely make again.

    This was truly delicious! I made half the recipe, and my only changes were to use all beef stock instead of water (why add flavorless water?) and to use an 8 oz. can of Herdez tomatillo salsa instead of a can of tomatillos. Made the night before so flavors could blend. Served with small corn tortilla quesedilla and sliced fruit. Simple but so good!
