Beef Noodle Casserole

Yield 6 servings


  • 1 package RONZONI HEALTHY HARVEST Wide Noodles, uncooked
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/2 teaspoon dried thyme leaves
  • Salt and ground black pepper to taste
  • 3/4 cup (4-ounce can) sliced mushrooms, drained
  • 1 3/4 cups (14 1/2-ounce can) whole tomatoes, undrained and chopped
  • 1/2 cup dairy sour cream
  • 1 cup (4 ounces) shredded mozzarella cheese

How to Make It

  1. Heat oven to 350°. Cook noodles according to package directions for 4 minutes; drain. Meanwhile, in large skillet, cook meat and onion; drain. Stir in thyme, salt and pepper; place in large bowl. Add mushrooms, tomatoes, sour cream and noodles. Spoon mixture into greased 2-quart casserole; sprinkle with cheese. Bake, uncovered, 30 minutes or until hot and bubbly.
