How to Make It
Heat oil in a large wok or pan, and cook curry paste for 1 minute. Add the meat, and stir-fry for 3minutes, stirring to break up the beef.
Add 1/2 cup water, the fish sauce, and the sweetener, and simmer gently for 5 minutes.
Cook the rice in 1 cup salted water; bring to a boil, cover, and simmer for 15 minutes until rice is tender and the liquid is completely absorbed.
Add bok choy and scallions to meat, and cook for 1 minute until just wilted. Serve with the rice.
