I love these! Very easy to make and easy to get creative with. I put feta for the cheese and added basil, subtracted the carrots. Takes a little longer to boil the peppers and a little longer to bake.

I liked the dish. Yes, I would make it again. Perfect for everyday but also company worthy. I did not have celery on hand. I used Cheddar cheese. I also cut the peppers in half and then stuffed them putting cheese on top. It took a little longer to make but it was worth the time.

The dish came together quite nicely and was very tasty. I am not sure how they came up with the prep time.It took me a little longer than I thought it would. It really didn't matter it was worth it. The whole family had the same reaction. Red Yellow and Orange Peppers make the best presentation.

Loved this! Will make again! This only has 12g of protein, so need to buff it up with a little more for a complete meal (like beans) Super for during the week and a very pretty dish! Yum!

My family really liked this - made it multiple times now, It modifies easily. Last night I used sweet italian sausage and Costco's Harvest Medley brown rice. Because I am lactose intollerant I used jalepeno jack almond cheese.....yummy! I have also used half turkey and half italian sausage (I don't like ground beef).

My husband and I really enjoyed these peppers. I made them with red peppers. We loved the cheese melted into the filling. Very tasty.

Husband and friends loved this! I improvised adding what I had on hand...fresh tomatoes, tomato paste, mushrooms and the pepper tops to the filling. I will definitely be making variations of this for the family on a regular basis. Enjoy!

This is definately getting added to the routine meals!! Excellent recipe! I left out the celery because I didn't have any on hand and I used colby jack cheese and it turned out so delicious. The flavors blended so well and it had so much flavor, and the cheese mixed in with the beef and veggie makes it creamy and the rice makes it hearty. My husband and 2-1/2 year old loved it. The only thing I recommend is to remove the stems of the peppers before boiling because they get a soggy green mush around them. And following the boiling directions perfectly results in perfectly cooked peppers.
