Beef-and-Onion Cornbread Pie

  • 1 pound ground beef
  • 1 large onion, chopped
  • 1/2 green bell pepper, chopped
  • 1 (11-ounce) can corn kernels, drained
  • 1 (10 3/4-ounce) can tomato soup
  • 1 cup water
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 3/4 teaspoon pepper
  • Cornbread Topping
  • Garnishes: shredded Cheddar cheese, sour cream, cilantro sprigs


  1. Cook first 3 ingredients in a large skillet over medium-high heat, stirring until beef crumbles and is no longer pink; drain. Stir in corn and next 5 ingredients. Reduce heat and simmer 15 minutes.
  2. Pour beef mixture into a lightly greased 2-quart baking dish. Spread Cornbread Topping over beef mixture.
  3. Bake at 425° for 18 to 20 minutes or until golden. Garnish, if desired.
