Bean Corn Dip

  • 2 15 oz. cans Black beans rinsed & drained
  • 20 ounce(s) frozen corn kernels
  • 2 medium tomatoes, diced
  • 1 green pepper diced
  • 1/2 cup(s) red onion diced
  • 2 jalapeños diced
  • 1/3 cup(s) lime juice, fresh
  • 1/3 cup(s) olive oil
  • 2 tablespoon(s) coriander seeds, ground or 1/3 cup fresh cilantro
  • 1 teaspoon(s) salt
  • 1/2 teaspoon(s) ground cumin
  • 1/2 teaspoon(s) cayenne
  • pinch(s) cilantro, if not using above
  • tortilla chips


  1. Toast dried herbs.

  2. combine vegetables in a non metallic bowl

  3. combine ingredients for marinade and whisk to mix

  4. Add to vegetables and let stand for 1 hour

  5. Serve w/ tortilla chips
