BBQ Relish
Ingredients
- 1/4 cup chopped uncooked bacon (about 1 1/2 slices)
- 1/4 cup minced white onion
- 1/4 cup minced red bell pepper
- 1/4 cup minced yellow bell pepper
- 1/4 cup minced pasilla or poblano pepper
- 1 tablespoon minced garlic
- 1 1/2 cups commercial barbecue sauce
- 1/4 cup lightly packed fresh cilantro, chopped
- 1 teaspoon fresh lemon juice
Preparation
- Cook bacon in a heavy saucepan until crisp; drain. Add onion, peppers, and garlic. Cover and cook over medium heat for 8 minutes. Stir in barbecue sauce. Bring mixture to a boil. Cool completely; stir in cilantro and lemon juice.
