For a kid-friendly pie, substitute fresh mozzarella for the blue cheese.
1 (8-ounce) prebaked thin pizza crust (such as Mama Mary's)
1/3 cup barbecue sauce
1 1/2 cups shredded skinless, boneless rotisserie chicken breast
1/2 cup vertically sliced red onion
1/2 cup coarsely chopped yellow bell pepper
1/2 cup (2 ounces) crumbled blue cheese
2 plum tomatoes, thinly sliced (about 1/4 pound)
How to Make It
Preheat oven to 500°.
Place pizza crust on a baking sheet. Spread sauce over the crust, leaving a 1/2-inch border. Top with chicken and remaining ingredients. Bake 10 minutes or until cheese melts and crust is crisp. Cut into 12 wedges.
This has become a regular in my dinner rotation, especially on nights when I need something quick. The pizza is hearty and tasty. I make the chicken breast instead of using rotisserie, add a little extra BBQ sauce over the chicken, use a little shredded fresh mozzarella in addition to the blue cheese and use a Boboli crust. I'm not sure the extra BBQ sauce or the mozzarella is necessary but I don't want to risk a good thing!
Really easy and good. I used a Boboli whole wheat crust on a pizza stone, and used Trader Joe's KC Barbecue Sauce. I doubled the cheese and used a reduced fat Mexican blend instead of blue cheese, and put a few chopped fresh chives on it. Delicious!
