Bayou Catfish Fillets

    We loved this fish recipe! We are trying to incorporate more fish into our diets but I just don't know how to prepare it. This was simple and delicious and we will definitely have this again. Tad spicy so beware. I served it with a salad and fresh watermelon slices to tame the heat.

    I've never used catfish before--tried this super-easy recipe and loved it. Used yellow cornmeal--the mixture made a beautiful crust. The spicy flavor went well with rice and steamed asparagus. Will be making this again soon.

    Excellent recipe - definate keeper! My husband is picky about fish so I was thrilled that we both liked this recipe. A great alternative to fried catfish. It still has that cajun fried flavor without all the heaviness of fried fish. Perfect blending of seasonings. I served it with vinegar slaw and hash browns for a quick weeknight dinner. I highly recommend it!

    The seasoning mixture is really good. I used Tony Chachere's cajun spiced salt instead of regular seasoning salt and added 2 TB of Panko to the mixture. Actually cooked these in the large cast iron skillet (five minutes per side at medium high heat) with 2tsp. of oil instead of broiling. Served with a turmeric rice and steamed greens, with lemon slices on the side.

    Super quick and easy and the cornmeal crust was perfectly seasoned. This was so much better than the fried catfish I made last month, and of course much healthier.

    Everyone loves it, every time. Try to choose evenly thick filets, as the skinnier bits tend to become a little too black.

    Really GOOD catfish seasoning! My husband went out and bought some huge filets and I wanted to avoid frying so we found this recipe and tried it. Outstanding!! Even though I doubled the recipe I was still short, so we had to use Zataran's - boy, the difference was evident! Everyone at the dinner table was amazed that the fish was broiled but still looked and tasted so good. Will do this one again and again!!!

    OK, I cheated & pan fried;-(. But, I used oil sparingly in pan; 'twas delish;-).
