Bayley's Original West Indies Salad

Yield 4 servings


  • 1 medium onion, finely chopped
  • 1 pound lump crab meat
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup vegetable oil
  • 1/4 cup cider vinegar
  • 1/2 cup cold water
  • Bibb lettuce leaves

How to Make It

  1. Line the bottom of a large mixing bowl with half of chopped onion. Add crab meat, and top with remaining chopped onion; sprinkle with salt and pepper.

  2. Pour oil, vinegar, and water, in order, over crab meat mixture. (Do not stir.) Cover and chill 2 to 12 hours.

  3. Toss lightly, and serve on individual lettuce-lined serving plates.
