Line the bottom of a large mixing bowl with half of chopped onion. Add crab meat, and top with remaining chopped onion; sprinkle with salt and pepper.
Pour oil, vinegar, and water, in order, over crab meat mixture. (Do not stir.) Cover and chill 2 to 12 hours.
Toss lightly, and serve on individual lettuce-lined serving plates.
