- 2 eggs, separated
- 2 tablespoons all-purpose flour
- 2 tablespoons water
- 1/2 teaspoon salt
- 1 pound flounder fillets, cut into serving-size pieces
- 1/4 cup vegetable oil
- Combine egg yolks, flour, water, and salt in a medium mixing bowl; stir well. Beat egg whites (at room temperature) until stiff peaks form; gently fold into yolk mixture.
- Dip fillet pieces in batter a few at a time, coating well. Fry in hot oil in a heavy skillet over medium- high heat until lightly browned on both sides. Turn twice during frying process. Drain well on paper towels. Serve immediately.
