  • 2 eggs, separated
  • 2 tablespoons all-purpose flour
  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1 pound flounder fillets, cut into serving-size pieces
  • 1/4 cup vegetable oil


  1. Combine egg yolks, flour, water, and salt in a medium mixing bowl; stir well. Beat egg whites (at room temperature) until stiff peaks form; gently fold into yolk mixture.
  2. Dip fillet pieces in batter a few at a time, coating well. Fry in hot oil in a heavy skillet over medium- high heat until lightly browned on both sides. Turn twice during frying process. Drain well on paper towels. Serve immediately.
