Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 egg, beaten
- 3/4 cup milk
- 1 (3 1/2- to 4-pound) broiler-flyer, cut up
- Vegetable oil
Preparation
- Combine first 6 ingredients; mix well. Dip chicken pieces into batter.
- Heat 1 inch of oil in a large skillet to 375°; add chicken, and brown quickly on all sides. Reduce heat; cover, and fry 25 minutes or until chicken is tender and golden brown, turning occasionally. Drain well on paper towels.
