Ingredients
- 1 cup uncooked basmati rice
- 1 (14-ounce) can fat-free, less-sodium chicken broth
- 1/4 cup water
- 1/3 cup chopped pecans, toasted
- 1/4 cup chopped fresh flat-leaf parsley
- 1 tablespoon butter, softened
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon freshly ground black pepper
Preparation
- 1. Combine the basmati rice, chicken broth, and 1/4 cup water in a medium saucepan, and bring the mixture to a boil. Cover, reduce heat, and simmer for 15 minutes or until all the liquid is absorbed. Stir in toasted pecans, chopped parsley, softened butter, salt, cumin, and black pepper.
