Basil Tomato Feta Bruschetta

Prep time 25 mins
Yield Makes 36 servings
Got the tomatoes. Got the basil. Check and check. But news flash—we think bruschetta is betta with feta. Check it out and see if you agree.

  • 1 loaf (1 lb.) French bread, cut into 36 slices
  • 2 tablespoon oil
  • 2 1/2 cups plum tomatoes, chopped (7)
  • 1 pkg. (4 oz.) ATHENOS Crumbled Feta Cheese with Basil & Tomato, finely chopped
  • 1/2 cup finely chopped red onions
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon chopped black olives
  • 1 teaspoon pepper

How to Make It

  1. HEAT broiler.

  2. BROIL bread slices 2 to 3 min. on each side or until lightly toasted on both sides. Brush lightly with half the oil.

  3. COMBINE tomatoes, remaining oil, cheese, onions, parsley, olives and pepper.

  4. SPOON onto toast slices just before serving.
