Ingredients

  • 3 tablespoons shallots, minced
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup sherry vinegar
  • 1 1/2 cups extra virgin olive oil

Preparation

Whisk together first 5 ingredients in a medium bowl. Gradually whisk in oil.
