- 3 tablespoons shallots, minced
- 2 tablespoons Dijon mustard
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup sherry vinegar
- 1 1/2 cups extra virgin olive oil
