My review is for the entire meal suggested by Cooking Light, including the warm bacon vinaigrette, mushrooms, and mashed potatoes. It was really an excellent meal. While it took me longer than 40 minutes, it was still pretty quick given the amount of food. I couldn't find striped bass filets so I tried cod, which was okay, but cod didn't hold up well to the strong flavor of the bacon vinaigrette. I tried again with halibut, which was much more expensive but delicious. We really liked the mushrooms as well. The mashed potatoes were solid but I'll probably doll them up a little more next time. This is definitely a keeper recipe to use the next time I find well-priced fresh fish.
Basic Striped Bass
For a nice and simple meal, try Basic Striped Bass. With only four ingredients, this pan-grilled fish will definitely make the dinner rotation.
