Basic Ravoli

Ingredients

  • cake flour

Dough

2 c flour

2 eggs

2T olive oil

1Twater

process in food processor (knead)

when it forms a ball, remove and wrap tightly in plastic wrap, let rest at least 1 hour.

divide into 4 sections

start with level 1 on pasta qeen, dough will be dry. Run it through that level about 5 times, till dough is plyable. contine to decrease levels untill you get to level 6. make ravioli...

Recipe 1

1 small onion

1 small stalk celery

1 small carrot

12oz Italian Sausage (can omit sasage for cheese ravioli)

italian seasoning

1 c ricotta (drained)

1/4 c parmesan

1/4 c parsley

remove sausage from casing, mix with wine

saute finely chopped veggies and sausage , set aside to cool

add ricotta parm and parsley and seasonings.

mix

place on dough, boil till they come to top of pot, serve with tomato pasta sauce.

1 small onion

1 small stalk celery

1 small carrot

4 oz finely chopped ham (use food processor)

1 c ricotta (drained)

1/4 c parmesan

1/4 c parsley

nutmeg

saute finely chopped veggies , set aside to cool

add ricotta parm and parsley ham and a dash of nutmeg

mix

fill ravioli let dry abot 2 hours then freeze or cook ..boil till they come to top of pot, about 4-6 mintes serve with alfredo sauce.

Let defrost slightly before boiling.
