This easy meat loaf recipe gets its great flavor from barbecue sauce. Try experimenting with different homemade or bottled sauces to find your family's favorite.
1 1/2 pounds ground beef, extra lean (raw)
1/2 cup dry breadcrumbs
1/2 cup chopped onion
1/3 cup barbecue sauce, divided
1 tablespoon prepared mustard
1 1/2 teaspoons chili powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 large egg whites
How to Make It
Preheat oven to 350°.
Combine the beef, breadcrumbs, and onion, 1 tablespoon barbecue sauce, and remaining ingredients except cooking spray in a large bowl.
Shape meat mixture into a 9 x 5-inch loaf on a broiler pan coated with cooking spray. Spread remaining barbecue sauce over top of meat loaf. Bake at 350° for 1 hour or until a thermometer registers 160°. Let stand 10 minutes. Cut loaf into 12 slices.
One of our two go-to meatloaf recipes (the other is the Italian meatloaf from the same CL issue). Kids love this one because they love BBQ sauce. I am lazy and use 1 whole egg instead of 2 egg whites, so mine is a bit less light than the CL recipe, but tasty just the same!
5 stars on taste and texture, 4 stars for the fact that I got more of a flat sheet than a loaf, even when using a loaf pan. I just cut it into squares rather than thin slices and it worked out fine. The mixture did seem a bit liquidy though, hence the lack of shaping. But as far as taste goes it was awesome! Maybe more breadcrumbs? Either way, great recipe. I subbed turkey for the beef, which I've never tried before. And you know what? I didn't notice a difference from full-fat ground beef!
Made this the first time 1/28/07. I always used 1# each of ground turkey breast and ground turkey, 3/4 cup breadcrumbs. Also add finely chopped carrots and other veggies in the fridge. Never bother to saute. And a couple dashes of cayenne. It is always moist. Freezes well. Serving it once again this evening, this time with garlic mashed potatoes and Italian green beans. Suffice it to say, this is one of our 4 meat loaf recipes.
I have never been a meatloaf eater because of the tomato sauce so I was interested when I saw this and had to try it! It was so easy to make and the flavor was awesome! I made it as written except that I sautéed the onions first and added about 1/3 cup cooked rice. I will be making this again often,thank for a new recipe I can add to my go to recipes list
This is my family's go to recipe for meat loaf. I sub lean ground turkey for the meat. I also use 1/4 c. oatmeal, 1/4 c. breadcrumbs. I also add green peppers or diced canned tomatoes for extra veggies. I use hot chili-powder as well. Use a thermometer when cooking to be sure not to overcook. Turns out great every time! My family loves this meat loaf.
