Banana Orange Muffincake

A dense, fruity cake that's great for brunch or dessert. From a Quaker Oats recipe booklet.

Ingredients

  • 1 1/2 cup(s) Flour
  • 1 cup(s) oats uncooked
  • 1/3 cup(s) brown sugar packed
  • 1 tablespoon(s) baking powder
  • 1/2 teaspoon(s) baking soda
  • 1/4 teaspoon(s) salt
  • 2/3 cup(s) banana mashed, ripe
  • 1/2 cup(s) orange juice
  • 1/3 cup(s) butter melted
  • 1 eggs lightly beaten
  • 1/2 teaspoon(s) grated orange peel
  • 1/2 cup(s) powdered sugar
  • 1 tablespoon(s) orange juice
  • 1/2 teaspoon(s) grated orange peel

Preparation

  1. 1. Preheat oven to 400.
  2. 2. Grease bottom of 9" round cake pan.
  3. 3. Combine dry ingredients in large bowl; combine next five ingredients in medium bowl, then add to dry ingredients, mixing just until moistened. Pour into prepared pan.
  4. 4. Bake 30-35 minutes, or until golden brown. Cool 10 minutes on wire rack before removing from pan.
  5. 5. Combine remaining ingredients and drizzle evenly over cake while still warm.
