Banana Crumb Muffin

  • 1 1/2 cup(s) Almond flour
  • 1 teaspoon(s) Baking Soda
  • 1/2 teaspoon(s) Salt
  • 3 whole(s) Ripe Organic Bananas (The more ripe, the better)
  • 1 Organic Egg beaten
  • 5 tablespoon(s) Coconut oil
  • 1/3 cup(s) Raw pecans chopped
  • 1 tablespoon(s) Raw agave nectar
  • Organic Blueberries optional and to taste


  1. Crumbs:
  2. 2 tbs almond flour
  3. ⅛ tsp ground cinnamon
  4. 1 tbs coconut oil

  5. Instructions:
  6. - preheat the oven at 350°F
  7. - in a bowl mix the almond flour, baking soda and salt
  8. - in a separate bowl, mash the bananas and mix in the agave, egg and coconut oil
  9. - pour the banana mixture into the flour mixture and stir to combine
  10. - fold in chopped pecans
  11. - spoon the batter into paper lined muffin pan cups

  12. Crumbs:
  13. - mix together the almond flour, cinnamon and coconut oil until mixture resembles coarse cornmeal and sprinkle over the top of each muffin
  14. - bake for 17 minutes or until tops turn golden brown

  15. Makes 8 banana muffins
