Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup "measures-like-sugar" calorie-free sweetener
  • 2 tablespoons margarine, melted
  • 4 medium-sized very ripe bananas, peeled and mashed
  • 1 large egg, lightly beaten
  • Cooking spray

Preparation

  1. 1. Preheat oven to 350°.
  2. 2. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 3 ingredients in a large bowl. Combine sweetener and next 3 ingredients; add to flour mixture, stirring just until moist.
  3. 3. Pour batter into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350° for 50 to 55 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire rack.
