Balsamic Roasted New Potatoes

  • 2 T. olive oil
  • 2 lbs. new potatoes
  • 1 T. minced garlic
  • 1 t. chopped fresh thyme
  • 1 t. chopped fresh rosemary
  • 1/8 t. nutmeg
  • 3 T. balsamic vinegar
  • 1/2 t. salt
  • 1/4 t. pepper


  1. Heat oil in a large cast-iron skillet over medium-high heat. Add potatoes and next 4 ingredients. Toss. Remove skillet from heat & place in overn.

  2. Roast potatoes, uncovered @ 425* for 30 min. or until potatoes are tender stirring occasionally. Add vinegar & toss well. Sprinkle with salt and pepper. Roast, uncovered 6 more min. Serve immediately.
