Balsamic Marinated flank steak and arugula

Ingredients

  • 1/2 cup(s) balsamic vinegar plus 2 tbsp
  • 3/4 cup(s) olive oil
  • 4 tablespoon(s) garlic cloves chopped
  • 2 tablespoon(s) rosemary coarsely chopped
  • 1 flank steal
  • 2 cup(s) arugula
  • 1 pound(s) cherry tomatoes
  • parmesan cheese shaved

Preparation

  1. Combine first five ingredients
  2. marinate 4-8 hours

  3. grill - allow to rest before slicing against the grain

  4. Whisk together remaining balsamic vinegar and olive oil

  5. add tomatoes and toss

  6. serve over arugula with shaved parmesan on top
