Balsamic-Apricot Butter

Our Food staff especially liked this and Peppy Basil Butter with the Steamed Fresh Artichokes. You can also brush either sauce on steamed artichoke halves in place of olive oil, salt, and pepper before grilling.

Ingredients

1/3 cup butter
2 tablespoons apricot preserves*
1 tablespoon balsamic vinegar
Salt and pepper to taste

Preparation

Microwave butter in a microwave-safe glass bowl at HIGH 30 to 45 seconds or until melted and hot. Stir in apricot preserves and balsamic vinegar. Season with salt and pepper to taste.

*2 Tbsp. peach preserves may be substituted.
