Ingredients
- 10 whole(s) cooked shrimp chopped
- 1 tablespoon(s) olive oil
- 1 tablespoon(s) scallions chopped
- 2 cup(s) fresh spinach chopped
- 1 teaspoon(s) garlic chopped
- 4 whole(s) tilapia filets (4 oz ea)
- 1 teaspoon(s) parmesean
- 1 tablespoon(s) lemon juice
Preparation
- preheat oven 425
- squeeze sprinkle lemon juice over tilapia and set aside
- chop the shrimp small
- heat oil in saute pan
- add chopped green onion, garlic, spinach. sea salt and pepper if you want
- simply toss until spinach begins to wilt
- in baking dish sprayed w non stick spray or coat w olive oil place 2 pieces of fish side by side
- sprinkle w old bay seasoning if you want
- mix shrimp w cooked spinach mixture and divide between fish in baking dish (i also added in some of the Japanese breading just sprinkled it in)
- i then sprinkled the mozzarella cheese on top
- top with other fillet and bake for 20 min or till cooked through
