Baked Tex-Mex Pimiento Cheese Dip

    Great dip! Flavor from peppers is amazing and so easy to make. Served with french bread crostini for dipping. The new favorite at the Superbowl party.

    Delicious!! I tried this yesterday and almost a made of meal of it. I used a milder pepper, serrano instead of Jalapeno.

    I completely forgot to add the pepper jack cheese, but I still loved it. I was the only one who really thought it was good though. Once everyone heard the name they had it in their head what it might taste like. I recommend not saying the Pimiento part and just say it's a Tex-Mex dip. I also wasn't happy with how the cheese melted, so I might try to pre melt the cheese slightly first. This was a great dip though, loved it.

    This dip was fantastic! Will definitly make this again! BTW, pjchand, serrano peppers are spicier than jalapenos

    I fixed this for an event at school. The faculty loved it and several asked for the recipe. Easy to fix. This dip made for a big hit.

    I made almost the same exact recipe a couple of months ago... It is delicious! And good cold as well, even before you bake it - I think I actually liked it better cold, like regular pimiento cheese! Toothfairy1 - the roasted peppers are used here instead of pimientos - they are very similar but the pimiento is a chili pepper while the roasted peppers are usually red bell peppers. You can use either but you won't get the charred flavor from the pimientos as you would get from the roasted peppers...

    Great dip I didn't the jalapenos pepper, because of kids and senior, but I did use a spicier pepper jack cheese.

    It's good but my dip came out too oily. Maybe add just a 1/2 cup of mayo next time.
