Baked Sweet Potatoes

Baked sweet potatoes make for a delicious side dish on Thanksgiving or Christmas.  Serve with turkey gravy and butter.

Ingredients

10 to 12 sweet potatoes or yams (1 1/2 to 2 in. thick and about 6 in. long)
Turkey gravy
Butter or margarine
Salt and pepper

Preparation

Scrub sweet potatoes and pierce in several places with a fork. Place potatoes on oven rack or in a single layer on a baking sheet. Bake in a 325° to 350° oven until potatoes give readily when gently squeezed, about 1 1/2 hours. Slit open; season to taste with gravy, butter, and salt and pepper.

Note:

Roast with the turkey; serve with gravy.
