- 1 (2 1/2-pound) dressed shad
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 tablespoons butter or margarine, melted
- Lemon slices
- Fresh parsley sprigs
How to Make It
Rinse fish thoroughly in cold water; pat dry. Sprinkle fish with salt and pepper; place fish in a well-greased 12- x 8- x 2- inch baking dish. Pour butter over fish.
Bake, uncovered, at 400° for 25 minutes or until fish flakes easily when tested with a fork. Transfer fish to a warm serving platter; garnish with lemon and parsley. Serve immediately.
