Baked Pork Loin Roast
This simple pork loin recipe is great alone and leftovers will make great sandwiches.
This recipe goes with Pressed Cuban Sandwiches, Barbecue Sandwiches

Ingredients
- 1 (3- to 4-lb.) boneless pork loin
- 1 tablespoon olive oil
- 2 teaspoons salt
- 2 teaspoons pepper
Preparation
- 1. Preheat oven to 350°. Trim boneless pork loin roast. Rinse and pat dry. Rub roast with olive oil. Sprinkle with salt and pepper; place in an aluminum foil-lined 13- x 9-inch pan.
- 2. Bake at 350° for 1 1/2 to 2 hours or until a meat thermometer inserted into thickest portion registers 150°. Let stand 15 minutes before slicing.
- Baked Pork Butt Roast: Substitute 1 (4- to 5-lb.) boneless pork shoulder roast (Boston butt) for boneless pork loin roast. Prepare recipe as directed in Step 1. Bake at 350° for 4 to 4 1/2 hours or until a meat thermometer inserted into thickest portion registers 180°. Let stand 15 minutes before slicing. Makes 8 to 10 servings. Prep: 10 min., Bake: 4 hr.
