Ingredients
- 1 (4- to 5-lb.) boneless pork shoulder roast (Boston butt)
- 1 tablespoon olive oil
- 2 teaspoons salt
- 2 teaspoons pepper
Preparation
- 1. Preheat oven to 350°. Trim boneless pork shoulder roast. Rinse and pat dry. Rub roast with olive oil. Sprinkle with salt and pepper; place in an aluminum foil-lined 13- x 9-inch pan.
- 2. Bake at 350° for 4 to 4 1/2 hours or until a meat thermometer inserted into thickest portion registers 180°. Let stand 15 minutes before slicing.
