Yield: 6 servings
- 1 pound okra, cleaned
- 1 large onion, chopped
- 1 medium-size green pepper, chopped
- 2 tablespoons bacon drippings
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 4 slices bacon
- Cut okra crosswise into 1/2- inch slices. Sauté okra, onion, and green pepper in bacon drippings in a large skillet 5 minutes or until vegetables are tender. Stir in salt and pepper.
- Spoon okra mixture into a 9- inch pie plate. Top with bacon slices. Bake at 350° for 30 minutes.
