To ripen nectarines, place the fruit in a basket, at room temperature, for 2 or 3 days or until soft. The nectarines will get sweeter the longer they stand.
1 tablespoon sugar
1/3 cup peach nectar
4 nectarines, each cut into 4 wedges
1/2 cup vanilla low-fat ice cream
Ground nutmeg (optional)
How to Make It
Preheat oven to 400°.
Combine sugar and peach nectar in a 9-inch pie plate. Place nectarine wedges, skin side up, in pie plate. Bake at 400° for 20 minutes or until tender. Spoon hot fruit and syrup evenly into 4 individual serving bowls. Top each evenly with ice cream. Sprinkle with nutmeg, if desired.
