Baked Grits

Yield 8 servings

Ingredients

  • 1 1/2 cups regular grits, uncooked
  • 3 cups water
  • 1 cup evaporated milk
  • 1/4 cup butter or margarine, melted
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1 teaspoon baking powder

How to Make It

  1. Combine grits and water in a heavy saucepan. Bring to a boil ; reduce heat, and simmer 2 to 3 minutes. Remove from heat.

  2. Stir in remaining ingredients, mixing well. Pour mixture into a greased 2-quart casserole. Bake at 425° for 25 minutes. Serve immediately.
