Baked Buffalo Chicken

  • Cooking spray
  • 1 1/2 teaspoons vegetable oil
  • 12 small bone-in chicken thighs (about 2 1/4 pounds), skinned
  • 1/4 cup hot sauce
  • 3 tablespoons fat-free margarine, melted
  • 2 tablespoons water
  • 1 tablespoon white vinegar
  • 1 teaspoon celery seeds
  • 1/8 teaspoon pepper
  • 1/2 cup reduced-fat blue cheese dressing


  1. 1. Preheat oven to 400°.
  2. 2. Heat oil in a nonstick skillet coated with cooking spray over medium-high heat. Add chicken; cook 4 minutes on each side. Transfer chicken to an 11 x 7-inch baking dish coated with cooking spray.
  3. 3. Combine hot sauce and next 5 ingredients; pour over chicken. Bake, uncovered, at 400° for 25 minutes. Serve with blue cheese dressing.
