Baja Fish Taco Salad with Creamy Jalapeno Dressing

Preparation

  1. For the fish, whisk:
  2. 1 c. yellow cornmeal
  3. 3/4 t. ea. ground cumin and coriander
  4. 1/2 t. ea. salt, pepper, and cayenne

  5. Heat:
  6. 3/4 c. canola oil
  7. 3 egg whites, beaten
  8. 2 T. water
  9. 1 lb. tilapia

  10. For the salad, toss:
  11. 6 c. thinly sliced green cabbage
  12. 1 cucumber, diced
  13. 1 c. halved cherry tomatoes
  14. 1/2 c. fresh cilantro

  15. Cut fish into strips. Heat oil, dredge fish in the cornmeal mixture; dip into egg mixture. Roll strips into cornmeal mixture a second time. Fry fish in batches in hot oil until golden.

  16. Creamy Jalapeno Dressing
  17. 1/2 c. mayo
  18. 1/4 c. buttermilk
  19. 1/4 c. scallions, chopped
  20. 1 jalapeno, seeded and chopped
  21. 2 t. lime juice
  22. 1/2 t. ea. salt and cumin
