Bacon Hominy

Yield 4 to 6 servings


  • 6 slices bacon
  • 1 medium onion, chopped
  • 1 (29-ounce) can hominy, drained
  • 1 (10 3/4 ounce) can tomato soup, undiluted
  • 1/2 cup water
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • Dash of pepper

How to Make It

  1. Cook bacon in a large skillet until crisp. Remove bacon, reserving drippings in skillet; crumble bacon, and set aside.

  2. Sauté onion in bacon drippings until tender. Add bacon, hominy, soup, water, sugar, salt, and pepper. Simmer, uncovered, for 30 minutes.
