This was one of two dishes I made for our Christmas morning breakfast with our adult children and everyone loved it!! The only change I made was to bake uncooked bacon the night before and crumble it the next morning just before I put everything together. The dish was light and fluffy with nice light brown crispy edges. This is definitely a small crowd pleaser, so easy to make, and although it's filling it's not a heavy dish. It is something I plan to make again!!
