When I found this recipe here it sounded so good that I really hoped to come back and give it a five-star rating, but it just wasn't. It's a three-star "good, solid recipe." It's okay, it's fine, not bad--just not spectacular. I served it with a dinner of summer vegetables and thought it would be a great addition to a meatless meal (well, almost; I guess the bacon in the muffins negates the "meatless" part). These would also be good at breakfast and, for some reason, I think they'd be good with grape jelly. I made them just as the recipe directed. As a side note, I used the drippings from the bacon to grease the muffin cups.
