Excellent mashed potatoes recipe and so easy. I used reduced fat sharp cheddar and skim milk to lightened it up. The combination of ingredients just made this really special. It does not need all the milk.

This is absolutely a great recipe and so easy! My husband loved it. It's just mashed potatoes with some additions so have all the ingredients ready when the potatoes are ready and voila. I also did not use all the milk called for; however, I have extra in the frig and freezer. If I need to I can add additional milk to make them creamier. I discovered that I didn't have any sharp cheddar so I substituted light Velveeta cheese, which I cut up into small pieces so they would melt easily. It worked great.I would serve this to company as it's an extra special way to serve mashed potatoes. I was looking for a recipe to bump up the pork chops for dinner, and this made a weekday meal great.

These were excellent. I didn't use all of the milk and left the potatoes kind of lumpy. The texture and the flavor was really nice. The bacon is definitely present, but subtle. Served with chicken thigh/lean pork meatloaf, brown mushroom gravy, and maple roasted carrots (CL recipe), followed by berry cobbler (CL recipe, also). What a comforting meal for a stormy night!
